RECIPE

We are collecting recipes for a future cookbook and thought the following might be appropriate for the season:
REUBEN SANDWICH
2 T. butter
8 slices rye bread
8 slices Swiss cheese
8 slices corned beef
1 cup sauerkraut, drained
1/2 c. Thousand Island Dressing

Preheat large skillet on medium heat.  Lightly butter one side of bread slice. Spread non-buttered sides with Thousand Island Dressing. Then layer slices of Swiss cheese, 2 slices of corned beef and 1/4 c. sauerkraut and second slice of Swiss cheese.  Top with remaining bread (Buttered sides out)  Grill sandwiches till both sides are golden brown, about 15 minutes per side.  Serve hot.
